I see the British summer has been and gone then! After a lovely few days of sunshine, there are now weather warning for rain again and my plans of letting the boys play in the garden all summer seems like a distant dream! However, George At Asda recently challenged us to brave the weather and host our own #OffSeasonBBQ to prove that you do not need good weather to get in the garden and have an outdoor cooking session!
We were sent a Bar-Be-Quick Smoker & Grill to assist us and we invited the family round on the soggy Bank Holiday Monday at the start of the month for our first BBQ in about two years. We used our normal BBQ for the sausages, burgers and chicken drumsticks but I decided to use the smoker to make smoked chicken breasts and thighs as they seemed a good place for a smoker amateur to start! I used this BBQ spice rub recipe and left the chicken to marinate in it overnight. Stuart followed the lighting instructions for it (which he did in the heavy rain!), however by the time we were ready for cooking the sun had come out and the boys were playing happily in the garden. My dad even built Thomas and Daniel’s new slide while the food so cooking so by the end of the afternoon, everyone was having a great time in the garden and had forgotten about the rain. The smoked chicken came out really well despite us not really knowing what we were doing. The rub was very tasty and was not as spicy as I had expected. The chicken was moist and tender and everyone loved it. I look forward to try cooking more stuff in the smoker over the rest of the summer and I will not let a few rain clouds put me off!
