This my recipe for Crème brûlée - easy to make and absolutely delicious to eat!

  • 300ml double cream
  • 25ml whole milk
  • 2 teaspoons vanilla extract or 1 vanilla pod, seeds removed and 1 teaspoon vanilla extract
  • 4 egg yolks
  • 3 tablespoons of caster sugar plus extra for sprinkling on top
  1. Preheat oven to 140 degrees C
  2. In a saucepan, add the cream, milk and 1 tsp of vanilla extract or vanilla pod and seeds (if using) and allow to warm gently on a low heat for a few minutes. Remove from the heat and set aside to cool for 5 minutes.
  3. In a mixing bowl, add the sugar, egg yolks and 1 tsp of vanilla extract and whisk together until light and frothy.
  4. Carefully mix together the milk and cream with the egg yolks and sugar. Ensure that the milk/cream mix is not too hot otherwise, you may cause the egg yolks to curdle.
  5. Divide the mixture between your serving dishes and then cook in the oven in a bain-marie (roasting tin filled with hot water halfway up the serving dishes) for 30 minutes until just set with a slight wobble in the middle.
  6. Remove from the oven and bain-marie and allow to cool down completely in the fridge for at least an hour or two.
  7. Sprinkle the top of the Crème brûlée evenly with caster sugar and then blow torch or grill carefully until caramelised. Allow to set for a couple of minutes then serve immediately.
Makes two to four servings depending on size of serving dishes
