Instaprint’s Cook Club Blogger Recipe Swap

A little while ago, I was contacted by Instaprint asking if I would like to submit a recipe to their cook club. I very quickly sent back my chicken & spinach curry recipe which has been a family favourite for a few years now and then promptly forgot about it.

A few weeks later, a gorgeous recipe tin arrived filled with not only my recipe, but lots of lovely recipes from fellow bloggers. I loved seeing my recipe in print on actual card in the lovely tin. It looked so much different to how it looks online. I was immediately very excited and set about deciding which of the wonderful recipes I was going to cook. My choice of recipes was:

I was very tempted to make the chorizo mac ‘n’ cheese, the chicken thigh risotto, the chocolate brownies and the caramel nibble cookies, however pregnancy exhaustion and time constraints meant I went back to my old favourite, chicken and spinach curry (without the spinach – I forgot to buy any LOL!!) I do have plans to make the recipes in the New Year once the baby had arrived and my energy levels are more back to normal. I look forward to adding more recipes into the tin in the new year and will make cooking my fellow blogger’s recipes a top priority.

Hairy Bikers Bloggers Know Best #1 – My Entry

Things have been a bit crazy round here so I have been a bit delayed in posting my first #bloggersknowbest entry. There is still a week left of the first linky so you have plenty of time to take part. All the information, the rules and the first linky are here. Simply, all you need to do is cook a Hairy Bikers recipe, blog about it and link it up. If lots of people get involved, I will try and get some prizes for people taking part.

My dish for this month is Sticky Chicken Thighs from the Hairy Biker’s latest book ‘The Hairy Dieters – Eat For Life‘. (Affiliate link) I unfortunately do not know the page number as I have the Kindle version however it is in the Meals on the Move chapter. I served them with rice as opposed to the coleslaw in the book and added some water to the marinade to make more of a sauce. It was really simple to make and perfect for an after work supper. I will definitely be making this again!

River Cottage Rocks! #5: Summer Time – My Entry

Here is my entry to this month’s River Cottage Rocks! And the theme this month is Summer Time! There is still time to get your entries in as the closing date is Monday 10th September.

For my entry, I have made pesto pasta however as I do not like nuts, I followed Hugh FW’s recipe for pesto made with breadcrumbs. You can find the recipe here. I used parsley and coriander but you could use whatever you left in the fridge. It made the perfect easy summer dish and one I am sure I will make again

 

River Cottage Rocks! #3: Veggie Heaven – My Entry

Sorry yet again for the lateness of this post. In between moving house, Thomas being ill and coming down with a cough and a cold myself, I have not had chance to stop. Here is my entry for River Cottage Rocks #3: Veggie Heaven. As I am late (again!) with posting my entry I will extend the deadline for entry into the third challenge until this coming Monday, 20th May.

As I was lucky enough to receive Purple Sprouting Broccoli (PSB) in my vegetable box,  I decided to make a recipe I have wanted to try for ages, PSB with Chorizo and Poached Eggs which is in River Cottage Everyday. I would tell you what page number you could find the recipe if I knew where the book was at this moment. (The perils of moving house!) It is great recipe however and shows off PSB to its full potential. The crispy, spicy chorizo and the creamy poached egg really complement the fresh flavoured PSB. I will definitely be making it again!

River Cottage Rocks! #3: Veggie Heaven

The theme for River Cottage Rocks #3 is simply called ‘Veggie Heaven!’. You can make whatever you want with this spring’s best produce. The only rule is that vegetables must be the main part of the dish. You can have meat etc as part of the dish but it must be secondary to the vegetables. The closing date for this challenge is Monday 14th May 2012.

River Cottage Rocks #2: Sunday Lunch

Thanks again to everyone who took part in River Cottage Rocks #1! Your dishes looked amazing. I cannot wait to see what you come up with now. The second theme is ‘Sunday Lunch’. This could be a joint of meat with vegetables, a slow cook meal or anything else you fancy, as long as you can take it easy, relax and enjoy a leisurely Sunday potting away in the kitchen.
