A short post this week as I am tired and it’s late but as you can see I am now back on the meal planning wagon! Being short of time and money means that meal planning really is the best way forward for us now. I also have a well stocked freezer and cupboard so we should hopefully be alright as money gets tighter in the long few weeks left until January payday! Anyway, here is what we are eating this week:
Monday Soup and bread – I go to yoga on Monday nights so need something simple
Tuesday Pork steak in BBQ sauce with long grain rice – however I am trying cauliflower rice for the first time to try and save some calories!
Wednesday Cod with tomato sauce with new potatoes and green beans
Thursday Gammon, egg and homemade chips
Saturday Hoisin and Garlic Chicken cooked in a bag with rice (cauliflower rice for me again if I like it on Tuesday)
Sunday Roast Shoulder of Lamb Sunday dinner for Daniel’s 1st birthday with grandparents and great-grandparents
