I lost my meal planning mojo during August. I have no idea where it went. I think it melted in all the warm weather we were having. However, it is September and I am back! I really must make sure I stick to my meal planning as with a second child on the way, upcoming maternity leave pay and Christmas, money will be tight over the coming months so we really need to watch our pennies. Therefore, if you do not see a meal plan post from me every week from now on, please feel free to tell me off!
This week, the majority of the meals are coming from The Hungry Student Cookbook by Charlotte Pike. Charlotte is a friend and fellow food blogger and I helped with some of the recipe testing for the three cookbooks (links below) she has recently published. A full review of the cookbooks will be coming soon once I have tried a few recipes from the books. This week’s meal plan is:
Monday: Pork, Ginger and Garlic Stir Fry with rice
Tuesday: soup and bread
Wednesday: Fish Finger Wraps and salad
Thursday: Chicken, Tomato and Mozzarella Pasta Bake with salad and garlic bread
Saturday: salmon, new potatoes and salad
Sunday: Beef in Beer with mashed potatoes and vegetables
