Here is my entry to this month’s River Cottage Rocks! And the theme this month is Summer Time! There is still time to get your entries in as the closing date is Monday 10th September.
For my entry, I have made pesto pasta however as I do not like nuts, I followed Hugh FW’s recipe for pesto made with breadcrumbs. You can find the recipe here. I used parsley and coriander but you could use whatever you left in the fridge. It made the perfect easy summer dish and one I am sure I will make again
